George was the son of Paul and Lillian (Hoss) Ellis.

He served in the U.S. Army from 1954 to 1956 in Alaska.

George graduated from University of Tennessee in 1960 with an engineering degree. He began his career as an industrial engineer in Roanoke, Virginia and eventually moved to High Point, North Carolina.

He lived in High Point for 40 years, and he enjoyed fishing, basket weaving and watching UT sports in his retirement.

The funeral service was conducted at 3:00 PM on Saturday, June 14, 2014 in the Riverside Chapel of Tetrick Funeral Home of Elizabethton, Tennessee.

Interment will follow in Happy Valley Memorial Park.

George married Phyllis Simerly on 26 Dec 1956. Phyllis (daughter of William M. Simerly and Alice Graybeal) was born on 10 Sep 1935 in , Avery County, North Carolina, ; died on 6 Sep 2015 in Guilford County, , , North Carolina; was buried in Happy Valley Memorial Park, , Carter County, Tennessee.
